We were invited to a pot luck dinner last week and I was asked to bring some baked beans. It was a pretty big crowd, so I needed a big pot of them. I came across this recipe for baked beans with tomato. Since the recipe calls for 2 pounds of dry beans, I figured that should make a decent size batch. I didn’t have a large enough casserole dish, so I fixed them in the crock-pot and it actually worked out perfectly. I took the crock-pot to the potluck with me and just kept it on the keep warm setting.

The baked beans were a huge it and before the night was over, the pot was empty and quite a few people asked me for this delicious bean recipe. I’m always nervous about making something for the first time, especially if I have to take it to a party like that right away. But there was just no way I would test this and then have the two of us eating beans for a week straight. So I’m glad things worked out and the dish turned out yummy.
